Normal

It's all gone, there is not a piece of turkey, dressing, shuck beans, or pie in sight. I'm kind of glad, now I can go on to something different! Well not too different, just normal. Today I think I just fry pork chops, nothing but salt and pepper sprinkled on them and just fry them with a little oil in a skillet. You just can't get any easier or better than that. With a side of mashed potatoes and green beans it will be like heaven. Oh, I'll just pop open one of those can of biscuits I've got in the refrigerator also (shh don't tell anyone).

I think the pie I liked the best was the Chocolate Peanut Butter Cream Pie. It seemed to go fast. They just don't know how easy it was.

Chocolate-Peanut Butter Cream Pie

1 9-inch baked pie shell
1 4 oz pack cook and serve vanilla pie filling
2 cups milk
1/2 cup semisweet chocolate chips
1/2 cup peanut butter chips.


In two seperate small bowls put the chocolate chips and the peanut butter chips.
In a saucepan, combine the pudding mix and milk over medium heat. Stir until it starts to boil them remove from heat.
Pour half of the pudding into the chocolate chip bowl and stir until melted. Then pour the other half of the pudding into the peanut butter chip bowl and stir until melted.
Spread the chocolate mixture on to the pie shell and then spread the peanut butter mixture on top. Top with cool whip.


So easy!

Biscuit Bread

I don't know maybe it's the cleaning, maybe it's the walking, (I have decided to start walking every day to the lake), or maybe I'm just getting old. No, now the last one couldn't just couldn't be it. I decided to make corn bread with our dinner today and save the rest that we didn't eat crumbled up in a bag in the freezer for use in the cornbread dressing. So I got started mixing, cornmeal, milk, eggs, oil, sugar, milk, and flour except I when I looked at it the mixture seemed so smooth. The brain was so slow to register (stop giggling), I just continued mixing then poured it into my iron skillet. Then stopped and looked and that's when out of the corner of my eye I saw the "cornmeal" bag except it was the self-rising flour bag. That's when Bat threw his hands up in the air,and declared enough. we are going to McDonald's, and I didn't say a word.

But there was this mixture, couldn't let it go to waste. So while Bat was gone I put in the oven and baked it at 400 degrees for about 30 minutes. It was so good -we loved it. It had the hard crust of a cornbread with the soft taste of a biscuit.
If you get a chance give it a try:

Biscuit Bread

3 cups of self-rising flour
2 eggs
2 tblsp. of oil
2 cups of milk
3 tblsp. of sugar

In a 12- inch skillet heat the oil. Meanwhile mix flour, eggs, sugar, and milk then after making sure skillet is coated with oil pour the rest into the mixture.
Bake at 400 degrees for about 30 minutes or until done and lightly browned on top. You can spread butter over top.

Turkey Cornbread Dressing

This recipe was handed down from my Mom. Just a simple but wonderful Cornbread dressing. I thought it was just ours -until I took my Mom to Arkansas one year for a family trip. We stopped at a cafe and I ordered turkey and dressing. When the waitress brought it and sit down in front of me, then I knew. You could tell by the looks-- it was "our" recipe and it was delicious! After I made some inquiries about the cook, well her last name was the same as ours, but we couldn't trace her to the family tree. So maybe it's still ours!

Turkey Cornbread Dressing

6 cups of cornbread crumbs
1 onion sliced
1 1/2 tsp. salt
2 cups of biscuit or dry white bread crumbs
3 tbsp. of sage
6 boiled eggs, diced
enough hot water or broth to moisten

Combine all ingredients. Stir until well mixed. Stuff your turkey!

Getting ready for a tea

I'm getting ready this morning to head over to Mattie's @ Lazy Bee Farm for a virtual tea party at 10 a.m. Ever been to one? I haven't either, but I do have to say I'm getting a little excited. Now my tea has to been Lipton with a little sugar or honey and some half and half. I don't like any different flavors such as mint, I'm a no frills type of girl. Now to round up some cookies.
